- 1 whole chicken, cut into 8 pieces

- 2 tablespoons of vegetable oil

- 1 tablespoon of salt

- 1 teaspoon of sugar

- 2 teaspoons of ground ginger (halia)

- 1 teaspoon of ground black pepper

- 2 cloves of garlic, minced

- 1 onion, chopped

- 2 stalks of lemongrass, bruised

- 1 inch of ginger, smashed

- 3 red chili peppers, sliced

- 1 tablespoon of cornstarch

- 1 tablespoon of cold water

Instructions:

1. Heat up the vegetable oil in a pan.

2. Season the chicken with salt, sugar, ground ginger, and black pepper.

3. Fry the chicken in the pan until it's golden brown.

4. Remove the chicken from the pan and set it aside.

5. In the same pan, saute the garlic, onion, lemongrass, ginger, and red chili peppers until fragrant.

6. Add the chicken back into the pan and mix everything together.

7. In a small bowl, mix the cornstarch and cold water together.

8. Pour the cornstarch mixture into the pan and let everything cook together until the sauce has thickened.

9. Serve hot with rice and enjoy your delicious Ayam Masak Halia!
