Instructions:
1. In a pan over medium heat, add the vegetable oil and fry the dried chili peppers until they turn dark red. This should take about 1-2 minutes. Be sure not to burn them.
2. Remove the chili peppers from the pan and set them aside.
3. In the same pan, fry the garlic and shallots until they're golden brown. This should take about 4-5 minutes.
4. Remove the garlic and shallots from the pan and set them aside.
5. In a mortar and pestle, grind the fried chili peppers, garlic, and shallots until you get a fine paste.
6. Add the tamarind paste, fish sauce, and palm sugar to the paste, and mix well.
7. Your Nam Prik Pao is now ready! You can store it in an airtight container in the refrigerator for up to 2 weeks.
